Someone give me a sticker: “I survived Whole30”!! Have you heard of the Whole30 program? It’s basically eating whole foods (that’s right, NO sugar!) for 30 days, to reset your body. I’m up for a good challenge and I knew it was probably time to do something, so I tried it. And made it! Which is saying a lot, because I’m HUGE into sweets. Like huge. So cutting out dessert was a really big deal. About a week and a half in, Trevor was all “do you want me to fry you up an apple or something”, joking about my lack of dessert – – but then it sounded so good, I thought, yes, let’s do that! And it was surprisingly really good. I think it’s how I was able to get through the whole 30 days, because it gave me a version of dessert that was working for me. Kind of like a healthy apple pie. Minus the pie.
I was just going to share this on social media, but then I thought I should put it here on the blog in case it helps anyone else who’s struggling with trying to find a healthy dessert option.
So, let’s dive right in!
You’ll need:
–tsp of coconut oil (I usually just guesstimate this)
–1 apple, diced (my favorite is granny smith, the green apples)
–cinnamon and nutmeg
–optional: pecans and/or raisins
First you heat up your pan and put in the oil and apples:
After a few minutes, add in cinnamon and nutmeg to taste (I don’t measure, just sprinkle it in) and the nuts and/or raisins (if desired).
Then you just cook it for a few more minutes, until the apples have started to soften. Then eat them while still warm – seriously, so good!!
