Start with your cubed chicken and just dump it into your crockpot. Let it cook on low for 2-3 hours. So I put this in at about 9:30am ish.
Around noon I added the rest of my ingredients. I tried to go as organic as I can – this is garden corn that we had too much of so I cut it off the cob and froze it for future use – like this chili!
Then instead of canned tomatoes, I used some fresh from the garden, along with garden onions and peppers.
Of course what makes this dish what it is are the spices it calls for – I stuck with the recipe on this except for the red pepper because I’m a wimp when it comes to hot spicy things (if you’ve ever purchased extra mild salsa, you know what I’m talking about). Trevor on the other hand loves spice, so I’ve found that the compromise is that he adds it to his individual bowl at dinner instead of putting it in the whole pot.
Anyways, let that simmer til dinner, about 4-5 hours. That’s it! Love how it’s so easy. I have most my energy in the morning, so I love that I can prep meals then instead of scrambling to make them at 5pm. And it smells good all afternoon – mmmm!

I love to experiment in the kitchen, so I’d say all the spices!! Garlic is an all-time favorite because it adds so much to just about everything savory. Nutmeg is the best for sweets, especially this time of year.
