Have you tried a mango lately?? we are hooked! My daughter headed off to a Mango Cooking Class with her grandma (I was couch-ridden with the other daughter – luckily it was grandma to the rescue) and came back raving about mangos. And now we’re incorporating them into more things – we just whipped up a Mango Banana Smoothie for an after-school snack and it was delicious!
It was super easy – recipe straight from the Mango.org site:

At the class they were taught how to properly cut a mango – do you know the secret? Also great tips on finding a ripe mango…squeeze the mango and a ripe one will have a slight give to it.

I love mangos! I like to cheat and get the fresh slices in a container at Sam’s or the frozen chunks for smoothies. I do know the secret to cutting them. When we buy them fresh, I cut them that way, but instead of scooping out the cubes, I push the mango half up from the peel side so all the cubes pop up but are still attached. Then I hand the halves to my kids who just eat them right off the peel!

the yellow ataulfo mangoes are the best when you can get them. They have a silky texture and very juicy.
