I’m super thrilled to be one of the Dessert Contributors here on Sugar Bee Crafts….it’s always flattering to write for a blog you already read and love! So today, I’m sharing with you a yummy recipe for Cinnamon Roll Coffee Cake! I made this for my sister’s Tutu Cute Baby Shower that we hosted, and it was a hit! Since we hosted a brunch for the shower, I went straight to my Breakfast Foods Pinboard, knowing I’d find something fab.
Ingredients:
3 cups flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cup milk
2 eggs
2 teaspoons vanilla
1/2 cup melted butter
Topping:
1 cup softened butter
1 cup brown sugar
2 Tablespoons flour
1 Tablespoon cinnamon
Directions:
1. In a stand mixer, fitted with the paddle attachment, mix the first seven ingredients together.
2. When they are well combined, slowly add the melted butter. Mix until you have a nice cake like batter.
3. Pour the batter into a greased 9×13 pan.
4. Mix the topping ingredients together, and drop by spoonfuls evenly across the top of the batter. Swirl it evenly with a knife.
5. Bake at 350 for 30 minutes, or until a toothpick inserted in the center comes out clean.
6. Allow the cake to cool a bit. For a glaze, you can use store bought vanilla frosting. Or, mix up your own. Combine 5 tablespoons milk, 2 cups powdered sugar, and 1 teaspoon vanilla. Warm in the microwave for about 30 seconds, and pour over the Cinnamon Roll Coffee Cake.
