
It called for using a knife (too hard) or a large straw (didn’t have) to cut the inner circles – I dug through my kitchen for something circle-shaped and ended up using a frosting tip.
I’ve never toasted coconut before, but it wasn’t hard – just spread it out and stir it every few minutes – I baked it for 20 minutes but it was probably a couple of minutes too long.
I don’t have any pics of the spreading carmel-coconut goo on the tops of the cookies – it was a sticky mess, and I had to reheat it a couple of times. Then after I spread the top goo on, let it cool.
I think I rolled my cookie part a little to thin, so make yours thicker than pictured below. I took the cookie and dipped it directly in the melted chocolate chips – seemed easier than trying to spread chocolate with a knife.
Then set it chocolate-side down on wax paper to make the bottom smooth without sticking to a surface. Then take your leftover chocolate and spoon it into a plastic bag – cut the corners and then drizzle chocolate lines across the top – I think my corner cut was a little too big because my lines are thick – oh well.
Then, with children hoovering, I needed to speed up the cooling/chocolate hardening process, so I stuck them in the freezer for a few minutes. And then passed them around – YUm!
When my toddler saw the fun he was missing, he came running into the kitchen carrying a stool – I grabbed the camera just in time to capture him sneaking his share:

thank you thank you! These are my absolute favorite cookies ever (not just favorite girl scout cookies) I hate that you can only get them once a year, and not at all where I live. Oh, and too big snip in the bag = more chocolate on the cookie, so you’re fine!
