Broccoli Potato Cheese Soup

I’m souper excited to be part of the #Souperbowl with Nebraska Furniture Mart.  I’m excited to share with you my family’s FAVORITE soup – my kids go crazy for this one! – it’s Broccoli Potato Cheese Soup (of awesomeness!).  It was also my favorite as a kiddo, so I love passing on the goodness to my kiddos.

It’s the best broccoli potato cheese soup you’ve ever had – those three key ingredients play off of each other so well, and it has a whole package of bacon in it… mmmm…

So let’s jump right in!  You’ll need:

6-7 potatoes, peeled and diced

1 bag of frozen chopped broccoli

4 C chicken broth

1 tbsp butter

1 pkg bacon

1 onion, diced

1 can fiesta cheese soup

2 cans cheddar cheese soup

1/2 – 1 C milk

So the secret to making this great is the Fiesta Cheese Soup – you have to look for it at the grocery store (in the soup section), but it’s there, and it’s awesome.

Pour the potatoes, broccoli, and chicken broth into a pot.  Bring to a boil and let simmer until potatoes are soft.

Meanwhile, in a saucepan, saute the onion and bacon and butter.  When done, drain from grease.

Finally, add the bacon mixture to the pot with the potatoes.  Add in the cheese soups and milk.  Stir.  Let simmer about 5 more minutes.  That’s all there is to it!!  Enjoy the amazing deliciousness. Pepper to taste.

You can top with bacon, green onions, and cheddar cheese, if you want it presented nicely, but normally we just eat it, unfancy 😉
