I’m not the greatest at food photos (kuddos to all those food bloggers – they’re amazing!) but I want to share with you today an easy weeknight meal idea that is one of our “go-to”s – the food you know everyone will love that is also easy to make. It’s a win win. We call it Mexican Pie, but I’m pretty sure it’s not authentic Mexican food 🙂
Mexican Pie (adjust amounts as needed – very flexible!) – I made a 9×13 pan (it might have even been a little bigger than that)
–2 lbs hamburger
–1 cup uncooked rice, then cooked
–1 can beans (I normally like black beans but I was out, so red beans is what I used this time)
–16 oz Salsa (usually half a jar, but I had a small jar so I used the whole thing)
–2 boxes cornbread mix and ingredients to make it (eggs and milk)
–1 can corn
Alrighty, here we go – – precook your hamburger – often I have precooked hamburger already in my freezer, so I just defrost that. Which makes the prep all the more quick. Combine your hamburger, rice, beans, and salsa. I often use leftover rice or beans that we have from previous meals – it’s just a hodge podge. You can also do straight hamburger, but I like having a little more filler than just meat.
Still til combined. Set aside.
Mix up the corn muffin mixes as directed. Then dump in a can of corn and stir.
Spread the meat mixture in your pan. Pour the cornbread mixture over the meat mixture and spread it out evenly.
You can see below how it’ll start to seep down a little – perfect!
Bake at 375 for about 30 minutes or until the top crust is cooked through and golden brown:
Top with salsa and sour cream and enjoy! My kiddos always load up on seconds with this one, so it’s a big hit on taste. It’s also easy to put together which makes it a perfect weeknight meal, so a big hit on prep for me.
We like to chop it all up and eat it – yum!
