Today’s Recipe: Gluten Free Oatmeal

A while back I was searching for a good gluten free cookie recipe,
there’s a lot of them out there, but they don’t always taste so good,
so decide to try to make my own. I took some regular cookie recipes
and substituted gluten free products and this is what I came up with.
If you like a sweet yummy cookie (that doesn’t taste gluten free,
believe me, I’m picky) than this is for you!

1 1/2 Cups of Pamela’s Gluten Free Baking and Pancake Mix
3/4 Cup Sugar
1/2 Cup Brown Sugar (packed)
1/2 Cup Butter (softened)
2 Eggs
1 Teaspoon Vanilla Extract
1 1/2 Cups Gluten Free Oats
1 Small Bag White Chocolate Chips
3/4 Cup Coconut
Preheat Oven to 350 Degrees
Mix the pancake mix, sugars, butter, eggs and vanilla together. Mix
well. Then fold in the oatmeal, chips and coconut.

Place small amounts of dough on a cookie sheet (small ones work a
little better). Bake at 350 for 8-10 minutes.
