Huh? Spudnuts?? Think doughnuts, with potatos. I was skeptical, but when we made these for playgroup they were yummy! Didn’t taste potato-ey at all, and I like to think they were “healthy” (right?!).
Recipe via a friend who hosted playgroup and prepped the dough – thanks Linzy!
Spudnuts
1 3/4 c. milk
1/2 c. shortening
1/2 c. sugar
1/2 c. mashed potatoes
1 T. dry yeast
1/2 c. warm water
2 eggs, beaten
1/2 t. vanilla
6 1/2 c. flour
1 t. baking powder
2 t. salt
Scald milk/ stir in shortening, sugar and mashed potatoes. Cool to lukewarm. Sprinkle yeast over water; stir until dissolved. Add to cooled milk mixture. Stir in beaten eggs and vanilla. Sift flour and gradually add to mixture, mixing well after each addition.
Knead lightly, adding 1/2 c more flour. Place in greased bowl, let rise until double.
Roll 1/2” thick on floured board. Cut with floured center.
Place on waxed paper, cover, let raise about 30 minutes (while oil heats up).
Deep fry in crisco (375 degrees). When dough pops right up, that’s when you know your oil is ready. Makes about 8 doz.

Glaze:
1 Pound Powdered Sugar
H2O
Vanilla
Mix to thin consistency & add flavor to your taste.
These are a Halloween night tradition in my house, I’m so excited for them!
