Every Tuesday dinner at our house is “Breakfast Tuesday” – I love breakfast food but am NOT a morning person, so we cereal every day. So once a week we eat breakfast food for dinner – yum! When my sister-in-law mentioned German Pancakes I knew I had to try them (this is what I read on her blog – how could I not try them!: They have been one of my favorite breakfasts; now they are my kids’….when the powdered sugar melts onto the left-over butter …)
6 eggs
1 stick butter
1 cup flour
1 cup milk
So, it was super easy to make and it’s done in a blender – weird, but fast. First you put a stick of butter in a 9×13 pan and stick it in the oven while it preheats (to 400 degrees). While waiting, mix up the eggs, flour, and milk in the blender until frothy.
Then pour it into the pan of melted butter and bake for 20 minutes. I didn’t know this would grow huge – it shrank back down, but right when I took it out of the oven it was so tall that it was touching my heating element (hence that U-shaped burn spot…).
Serve with powdered sugar and/or jam, jelly, syrup. It was yummy and definitely a keeper recipe.
Oh, and speaking of breakfast – here’s a tip for you: did you know that you can mircowave a can of OJ — really! My mother-in-law took a class on microwaving and learned this tidbit of info – love it! No more scooping out frozen OJ or having to remember to set it in the fridge. Just microwave for 1 minute – we’ve been doing this for years….

We used to have these pancakes every Christmas morning (and other times as well). So, in my house we called them…”Christmas Morning Pancakes”.
